Ingredients
- 4 Red Beets – cooked, peeled and thinly sliced
- 3 oz Leaf Lettuce, mixed
- 6 Green Onions, chopped
- 1 Dill, bunch – leaves only
- 1 Parsley, bunch – leaves only
- 2 Tbsp ABC® Sweet Soy
- 3 Tbsp Red Wine Vinegar
- 6 Tbsp Olive Oil
- Salt & Pepper to taste
- Mint, 4-6 leaves
Instructions
- Prepare lettuce in a large salad bowl.
- In a bowl, whisk ABC® Sweet Soy, vinegar, oil, salt & pepper together to make dressing.
- Mix in the beets and let them marinate for 2 minutes. Add green onion, dill, parsley, and mint.
- Pour dressing over the vegetables, toss and plate.
